Sweet Tea & Lemonade with Lemon Poundcake!

Lemon Poundcake Ingredients:

1 (9 inch) pie crust

1/4 Butter

1 small onion

1 green pepper

1 bag of small sweet peppers

1 bag (6oz baby spinach-remove large stems for a neater look)

1 cup shredded cheese (Colby Jack & Pepper Jack)

5 large eggs

1/4 cup milk

1/2 teaspoon of garlic salt

Ground black pepper (to taste)

Zoe Seasoning (to taste)

Instructions:

Prep: Preheat oven to 410 F. Lightly grease a deep dish 9 inch pie plate and fit the crust inside. Prick the bottom of the pastry with a fork a few times. Place in the oven until lightly browned.

Cook filling: Cook the onions and peppers until softened, then add the spinach and cook until wilted and excess moisture has evaporated. (Gently pat dry with paper towels if your spinach released a lot of water.)

Make egg mix: Whisk together eggs, milk and seasonings in a mixing bowl.

Assemble: Place the spinach and pepper mix into the prepared crust. Pour the egg mix over it. Sprinkle with cheese.

Bake: Reduce oven temperature to 375 Fahrenheit. Bake for 45 minutes or until the middle is set. If the top gets too brown, loosely cover with a piece of foil. Let stand for 10 minutes before slicing into wedges to serve.
